Its heavy 2-2.7mm thick blued iron surface suits moderate heat sources, heats quickly and evenly, and works on all hobs including induction. The lyre-shaped profile and sloped sides allow food to slide effortlessly to plates, ideal for searing steaks, frying or everyday commercial cooking. Riveted stainless steel handle stays cool longer; oven-safe up to 200C briefly. PFOA/PTFE-free, recyclable and dishwasher-unsafe - hand wash and re-season with oil for longevity.
